4. Catfish Cooking
This really isn't a catfish recipe but hush puppies are a great sidedish to serve with fried catfish.
Ingredients:
2 cups cornmeal
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons salt
1 tablespoon sugar
1/2 cup chopped onion
1/2 cup buttermilk
3/4 cup water
1/2 cup melted butter or margarine
1 egg
Sift together dry ingredients, add onion, add 1 cup flour, add butter and egg last. Drop by tablespoons into deep fat preheated to 370 degrees.
Cook till golden brown. Drain and serve.

5. Catfish Tips
One of the most famous methods to get catfish to bite is by using cutbait. Whether it's Bream, Crappie, Shad or Warmouth, cutting the bait fish for various hooks is essential to presentation, freshness, and overall dependability in water currents.
When using two fillets, place the skins back-to-back for freshness, hook both near the top, and let the remaining dangle.
Cut off the head, but don't throw away. This may be used at a later time when bait runs low. Insert hook through the body cavity at top so the spine is attached for better support.
When preparing cut bait, make sure hands are clean of any foreign smell. Wash off hands to be free of oil left on the skin. Catfish have a strong sense of smell and can detect residue left on the bait.
