Congratulations to Justin Worsham for landing a 41.38 Flathead. The water was a bit discolored due to heavy rains upstream. But that didn't stop 32 boat captains from weighing a catfish. And one of our youth anglers contributed $50 from his 50/50 winnings for the upcoming kids fishing day. Michael Moore opened his heart and wallet to support the greatest kids fishing event in the nation. Everybody at The Catfish Showdown thanks you.

4. Catfish Cooking

Catfish Dip

Ingredients:
8 ounces catfish fillet
1 sliced Onion
1 sliced Lemon
3 ounces softened cream cheese
2 tablespoons sour cream
1/4 cup chopped Onion
1/3 cup chopped parsley
1/4 cup chopped cilantro
2 tablespoons lemon juice
A taste of salt, pepper, and tabasco

Directions:

Place the catfish fillet in a skillet on a bed of sliced onions, and half of the fresh lemon slices. Add water to cover the onions. Top the fish off with the remaining lemon slices. Cover and simmer for about eight minutes. Allow the catfish to cool.

In a food processor, add cream cheese until blended, but not pureed, then add fish. Pulse several times. Add sour cream, chopped onions, parsley, cilantro and lemon juice. Salt and pepper to taste. Add a few drops of hot sauce. Blend again until the mixture is creamy. Add more lemon juice and seasonings to taste. Serve with small, toasted breads, or crackers.

5. Catfish Tips

River Flatheads at Kerr Lake

Flathead catfish find it simply irresistible when bait fish hover around log jams. Bait fish in particular like to take advantage of feeding on the microscopic organisms found on under water logs and debris. These are prime areas to fish.

The cycle of spring and summer feed patterns of bait fish invites a feeding frenzy for Flatheads. River current is also a major factor washing food down stream. Flatheads continually roam the rivers searching for log jams and back water holes for bait fish that stray outside the schools of bait fish.

Often times these powerful catfish will storm underwater log jams to disrupt the school in hopes to catch a weaker or injured bait fish. Contrary to belief, flathead catfish like to eat their food slow.

Even when the attack is aggressive, they gently open that huge mouth and slowly engulf their food of choice. They are the slowest eating catfish. No other catfish prefers this feeding method.

For example, let's say you chose to fish one of the rivers here at Kerr Lake for Flatheads. You locate a log jam and quietly anchor upstream. And your bait of choice is Bream. You float the hooked Bream close by a pile of logs.

Suddenly, the line slowly gets tighter. The rod tip doesn't twitch, but slowly bends. You wait to feel for the pickup and the fight is on. What has taken place is easy food for the flathead.

You see, when the Bream is on the hook it secretes an oil from the hook penetrating through the body of the Bream. This leakage creates curiosity, so the flathead will come to investigate. If the meal looks inviting, they will slowly place the bait fish in their mouth. Once the bait fish appears to be fully inside the flathead's mouth, they slowly gulp it down.
